SOIL TYPE

Romagna’s Chalk Vein area, clayey medium-texture soil rich in limestone and potassium. Exposure: South-West.

AGEING

In the baskets of metal wire mesh galvanized which allow the passage of water.

VINIFICATION

The grapes undergo a crushing and then are fermented at a controlled temperature (26-28°C), in stainless steel tanks with maceration that lasts for 10 days. Then the wine is separated from dregs, and stored in the basement until bottling.

REFINING

In vitreous cement tanks for about nine months. The bottles are stowed under the Adriatic sea bottom at a depth of 25-30 meters in stainless steel cages containing from 60 to 100 pieces each. Because of the isobar the temperature remain constant at around 10/13° C, and the emergence takes place after a period between 6 and 12/18 months, according to season and sea conditions.

SERVING SUGGESTIONS

Typical meditation wine, goes well with pasta dishes with meat sauce, red meat that is grilled and stewed whole game in general. Serving temperature: 16-18°C
