The bottles are immersed on the seabed
in the waters of the Adriatic,
in the area of the Paguro wreck.
They remain there for twelve months,
in very stable,
and unique, natural conditions.
The sea does not replace the cellar.
It becomes an extension of it.
The wine is entrusted to the depths of the sea,
which preserves it in unique conditions.
The temperature is constant.
The water filters light.
The pressure is higher than that of the surface.
The currents massage the bottles.
The wine remains alive.
In this environment, the wine evolves, following the high and low tides,
dictated by the lunar cycle.
The cork of each bottle
is covered with a mixture,
the dough of which is a constantly evolving recipe,
composed of sealing wax and shellac.
This allows for the microexchange of gases,
without any salty contamination.
After months on the seabed
the bottles are brought back to the surface.
Their recovery takes place with the assistance of professional divers
and with respect for the marine ecosystem.
Each immersion is monitored
and documented.
The bottles return to the light
carrying with them the marks of their journey.
No bottle is identical to another.
Marine encrustations,
time spent on the seabed
and the months beneath the water
make every bottle unique.
For this reason each bottle
can be traced back to its own immersion.
