The vines and the land

The viticulture of the vines is done by selecting the best land based on the crop. Here there are both native vines, such as Albana and Sangiovese, and international ones, such as Merlot and Cabernet.

Terrain features

The plants we look after are part of our family, which is why the first element of our viticulture method is the serenity of the vine. This leads to a production limited to only 70/90 quintals per hectare.

Vine breeding

We breed according to the Guyot technique, making sure that each plant bears the weight of a few bunches. The vines thank the reduced stress with grapes of much higher quality.

Soil

The soil is clayey, with medium-textured characteristics, and a strong mineral presence. Thanks to the nearby gullies, it is rich in limestone and potassium, which give the grapes a great salt content.

Exposure

Excellent south-west exposure.

Viticulture

Tenuta Del Paguro produces according to the dictates of integrated agriculture with low environmental impact, of which we have certification. For us it is not just a label but a method that links philosophy, concept and practice. Whenever possible, we use organic methods and human products are used conscientiously and solely for the benefit of the vine, the health of the plant and those who drink our wine.

Even if the grapes have a generally homogeneous maturation, we opt only for manual harvesting. Mechanized harvesting shakes the plant with vibrations of up to 600 beats per minute, creating stress and undermining the relationship of trust and serenity that binds the plant and the winemaker.

Even during the harvest, the human eye and the experience of the collector are important to select the best bunches and arrive at an excellent bottle. In fact, the selection has a high concentration of sugar and phenolic substances.

The winemaking

The vineyards are located on the hills of Riolo Terme: the native ones of the area such as Albana (first DOCG in Italy) and Sangiovese, and international ones such as Merlot and Cabernet. The climate, the location (with south-west exposure), the characteristics of the soil (clayey type, medium-textured, rich in limestone and potassium) and the wisdom in viticulture allow the creation of generous, soft, sweet wines, which they go perfectly with the underwater refinement of Tenuta del Paguro.
